How to measure a cup
The chart assumes the ingredient is spooned into the cup and levelled with a knife. Scooping the cup straight into the flour bag packs it down and can add 20–30 % more flour. That's why weighing with a kitchen scale gives more consistent results.
Not every cup is the same
US recipes use a cup of 236.6 ml. Australia, New Zealand and Canada mostly use a metric cup of 250 ml. The difference is about 6 % and doesn't matter for most recipes. See cups to ml for both.
