Why some recipes say 120 g and others 140 g
Flour compresses. Spooned and levelled, a cup weighs about 120–125 g; scooped straight from the bag it's closer to 140 g. 125 g is a good middle value that works for most American recipes.
Spoon and level, don't scoop
Stir the flour to loosen it, spoon it into the measuring cup until it's heaped, then sweep off the excess with the back of a knife. Never tap or shake the cup – that packs the flour down again.
